Grilled Mediterranean Pizza Recipe
CAUTION: This recipe tastes like an
oven-baked pizza, which may endanger your local
favorite pizzeria. Distribute recipe with care.
Basic Pizza Dough Recipe
1 package of dry yeast
1 1/3 hot water (110 degrees)
(The
recipe can be made with refrigerator dough
if you need to cut corners and save time.)
Add:
1 Tbs
kosher salt
1 Tbs sugar
2 Tbs Olive Oil
3 ¾ c all-purpose flour
(may
need to add more before grilling to both sides
of rolled out dough)
Toppings
Olive
oil and chopped 4-7 finely chopped garlic cloves
in place of traditional sauce
Medium pre-cooked shrimp detailed and seasoned
with Bay seasoning, salt, pepper and lemon
½ c fresh basil
½ c toasted pine nuts
4oz Feta crumbled cheese
4oz Grated parmesan cheese
½ a lemon sliced and ready to squeeze over top
of pizza just before serving
Mix
yeast and water and let stand until yeast foams.
Kneed for 12 minutes or until elastic. Place
dough in bowl lightly covered with olive oil and
coat dough with a bit. Cover with towel and let
rise in a warm place (at least 80 degrees.)
Allow to rise until doubled in size 1 ½- 2
hours. Roll out into circle or square and flour
each side until stable and ready for grill.
Heat
grill to 500 degrees, turn off one side of gas
grill and turn down flames to medium on the one
operating side. Place dough directly on hot
side until browned then flip and move to side
turned off. Put olive oil garlic and all
toppings on and shut lid so the dough bakes. If
the dough browns before the inside is fully
baked, put on a baking sheet and continue to
bake on the side turned off. (This Houdini
maneuver prevents your dough from burning before
it is cooked all the way through.)
Just
before serving pizza squeeze with fresh lemon
and enjoy the smells and salty ocean flavor of
this non-traditional pizza.
Quick dessert with grandiose style
This
is my favorite quick recipe for dessert when
time is a factor and company is coming for
dinner. It requires just a little prep and the
look on their faces when they receive this tasty
treat with coffee for dessert is almost as good
as the dessert. (Just a little note: these
taste better when they have sat in the freezer
over night and the cookies start to soften.)

Peanut Butter Chocolate is my husband’s
favorite.)
Mini-chocolate morsels
Bake
cookies according to directions and put slightly
melted ice cream onto cookies. Roll completed
cookie in mini-chips and wrap in wax paper for
freezer.
